When shopping at Sam’s of Costco, you can buy the large bags of baby spinach or spring mix and I end up throwing a good amount away if I don’t use it quick enough… any suggestions on how to keep it fresh longer?

Don’t leave it in that bag. Put it in another container will keep some time longer.
Try to keep it in a cool dry place, Moisture here is not your friend, If it is already packaged and you use some. Put the unused portion to a Ziploc. I keep mine in the crisper drawers. Things in there seem to keep well to my surprise.
I transfer mine to a plastic container with a lid that I line a paper towel with before putting the lettuce.
